Brewing green tea
Green tea brewing is easy.
There are few tricks to maximize the taste. To have a nice aroma and taste without getting bitterness of the green tea, you just need to watch the timing.
Put green tea leaf in the tea pot. About 8~9g (2 tea spoon) will serve 3 people. My tea pot is small, but you can get a larger one for a larger family. Reason why I use a smaller pot is since I usually drink tea by my self. I can pour all the tea I brew for one cup without leaving tea in the pot too long.
Pour hot water (165-170 F for most of the tea leaf) in the tea pot. Wait for 1~ 1 1/2 minute. Make sure to put the top. Tea pot works better to brew tea, since tea leaf will swim in the hot water freely. When you have time, you can first pour hot water in tea pot to warm your cup. Dump the water before you pour tea.
Now is the time to pour. Alternate small pours between cups to ensure even brewing. Make sure to pour all the water out.
If you leave the water in tea pot too long, the color will be changed to yellowish, and the taste of the tea turns bitter. You can enjoy second and third round as fresh as the first round. For the 2nd and 3rd round, you can pour tea in less waiting time.
Chabashira
Chabashira-Good luck: It is said that you'll have a good luck when chabashira (stem part of the tea) stands up in your cup.
So, don't think you have messy floaters in your tea. Look for the good sign!
